This low fat greek salad recipe is an authentic blend of some of the
traditional greek fare found in the southern european areas.
1 clove garlic, peeled and chopped coarsely
1/2 tsp. salt
3 Tbsp. tomato juice
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 1/2 tsp. dried oregano
1/4 tsp. fresh ground black pepper
1 medium head Romaine lettuce (6 cups)
1 cucumber, halved lengthwise and sliced
12 cherry tomatoes, quartered
1/2 red onion, sliced thin
8 black olives, such as Kalamata, sliced
1/4 cup crumbled feta cheese
Sprinkle garlic with salt and mash with the
side of a knife blade. Place garlic in a small bowl; whisk in tomato
juice, lemon juice, olive oil, oregano and pepper. Toss lettuce, cucumbers,
tomatoes, and red onion with the dressing. Scatter olives and feta cheese
over top.
