Dinner Crepes

Most people associate crepes with high fat scrumptious breakfast foods. This recipe is for dinner crepes and though it will do little to satisfy your sweet tooth, this low fat recipe will have you asking for more.

Basic Crepes batter
1/2 teaspoon five-spice powder
1/4 teaspoon ground turmeric
1 cup sliced cooked pork
1-1/2 cups packaged coleslaw mix
1/2 cup purchased hoisin sauce
Fresh chives (optional)

1. Prepare Basic Crepe batter as directed, adding five-spice powder and turmeric. Make crepes as directed.
2. Toss pork, coleslaw mix, and half of the hoisin sauce together in a mixing bowl. Fill crepes with pork mixture. Warm filled crepes in microwave oven, if desired.
3. Arrange crepes on individual plates on beds of fresh chives, if desired. Drizzle with remaining hoisin sauce. Makes 12 crepes.

Savory Crepe Ideas: Season the basic crepe batter with any of the following: 1/2 teaspoon dried thyme, crushed; 1/2 teaspoon curry powder; 1/2 teaspoon dried sage, crushed; or 1/2 teaspoon ground red pepper. Fill crepes with one of the following flavorful combinations: bite-size cooked boneless chicken pieces and steamed broccoli moistened with light Alfredo sauce; cooked spinach and lentils with crumbled feta cheese; chopped roasted turkey breast with finely diced butternut squash and topped with a spoonful of cranberry sauce; or cooked shredded beef, bean sprouts, and a little oyster sauce.
